Had a craving today, well, most days actually, for chocolate. I haven’t been eating very well lately….not very well at all. I had a pepsi. There. Now you know. So, in my quest for chocolate I knew I had to have something healthy involved….I turned to an old favorite….Chocolate Chip Pumpkin Cookies.

1 c. flour

3/4 t. baking powder

1 t. corn starch

1 t. cinnamon

1/8 t. salt

2 T. melted butter

3/4 c. pumpkin

1 t. vanilla

1/2 c. Honey, maple syrup or sugar

chocolate chips

Mix together. Chill dough for 30 minutes. place spoonfulls on cookie sheet and bake at 350* for 10 minutes.  Enjoy. Store uneaten cookies in the fridge.
